the actual hardware (the server)
where the server is, compared with where the customers will be (country, etc)
what will need to be run on the server (php, mysql, etc)

I’d say the most important thing is how much traffic do you expect and can the handle that and more. How reliable is the service (how many service interruptions have they had)? What do they provide for backup/DR? Who handles the site maintenance, what maintenance schedule do they have for their servers and what is the normal down time during the system maintenance?

It is very important that your service be uptime. It means that you can access your account whenever you want to update your web pages, and your visitors can view your website whenever they type your website address. If your hosting service is not uptime it is real hell!
